COOK | Mushroom & Bacon Chicken Pot Pie 

 Okay, is it potpie or pot pie? Even Queen Martha Stewart writes it both ways. Sigh.

Much less confusing? The yumminess that is pot pie! {I’m going with it…} We recently hosted some friends at our new house for dinner – oh, how I love having our home filled with wonderful friends and family! It was a weeknight get together so I knew the menu had to be quick and easy, something that could be tackled after a day at work.

With some tricks to speed up the process… because, time.

But! Don’t bother roasting your own chicken – grab a traditionally seasoned rotisserie chicken {2 + pounds} from the grocery store. Pull the meat off of the bones, discard the skin, I know…sad…., chop into 1 inch pieces. Add the chicken to the pot pie with the cream, as the original recipe says.

Making this as a ‘Make Ahead Meal’? Add the chicken and cream, let the flavors combine for 5 minutes on the stove. Then STOP HERE. Let the filling completely cool to room temperature and store in your refrigerator for up to 3 days.

Time to bake? Pull the filling from the refrigerator and let it come back up to room temperature – takes maybe 30 minutes – or heat on the stove over low low low heat. Add the filling to individual ramekins or a round baking dish.

Time saver alert — top with a thawed sheet of puff pastry, because who makes their own pie dough?!?!?!, brush with egg whites, then bake! Don’t poke holes in the pastry {thanks Mom!} and cover with foil if the pastry begins to get too dark before the filling is warmed {thanks Mom!}.

I added tin foil after about 25 minutes and pulled the entire dish out of the oven after a total of about 45 minutes.

Yum! This dish is good! Warm, filling, flavorful. Perfect for fall and winter, and easy easy to serve a group! Well 6 people. Any more guests than that and I would insist that you make two. Insist!
