I’m starting to dislike the use of the word detox. But yes, I just used it anyways! Sometimes you need a healthy reset – a binge on the good green stuff. And sometimes you get really tired of taking it in the form of a juice or smoothie. This week I traded my straw for a spoon and my sweet palate for a savory one. And I loved it.
Spend 10 minutes Sunday evening making this soup and eat lunch like a detox queen all week!
GREEN SOUP | DETOX LUNCH RECIPE
{adapted-ish from this recipe}
- 3 garlic cloves, chopped
- 1 medium to large yellow onion, roughly chopped
- 1 head broccoli, chopped
- 2 cups vegetable broth, organic, sodium-free
- 1/2 c water
- salt & pepper to taste
- 3+ cups fresh spinach
- 1 cup fresh parsley
- 1/2 cup fresh cilantro
- juice from 1 lemon
- 1 avocado
SAUTE garlic and onion until translucent and fragrant. ADD broccoli and let cook for 4 minutes. POUR in vegetable broth, water and salt & pepper; bring to boil, reduce to a simmer, cover for 8 minutes.
BLEND (yup, in your blender. PS – let the soup cool a bit before blending.) soup mixture with all remaining ingredients. You may need to split into 2 batches.
TEST salt, pepper, lemon and herb levels – then pack away for lunches or enjoy immediately.
ENJOY! I am not a broccoli lover at all, however I love the taste of this soup. I think it helps knowing how good for my body it is, too. The avocado gives such a creamy texture and decadent flavor. The fresh herbs and lemon juice keep the soup bright and fresh tasting.
